Put it all together

  1. Preheat your oven to 120°C (250°F). Melt the butter in a large non-stick frying pan over medium heat. Add the apple rings and cook, turning occasionally, until tender (10 to 12 minutes). Place in the oven to keep warm.
  2. Combine the potato, carrot, onion, and eggs in a large bowl. Stir in flour and salt until well combined.
  3. Heat 30 millilitres (2 tablespoons) of oil in a large non-stick frying pan over medium heat. Measure a generous 50 millitres (1⁄4 cup) of batter for each pancake, and cook four pancakes at a time until well-browned and crisp on the bottom (about four minutes). Turn pancakes over and flatten slightly with a spatula. Cook until browned, crisp, and cooked through (about another four minutes). Drain on paper towels. Place on a baking sheet and keep warm in the oven. Make another eight pancakes, using remaining oil as needed. Serve topped with apple rings.
